I have heard that 7.5mg will make you the most tired or sedated but is only effective for a sleep aid and not anxiety...true?
7.5 mg will make you more tired because at lower dosages its alpha blockage activity is less than its antihistamine and serotonin antagonist properties. This means that even at lower dosages, its effective for sleep, appetite, and anxiety---but not mood.

If you have other side effects on 15mg, does upping to 30mg decrease the side effects or just the side effect of dowsiness?
upping the dose relieves some of the sedation, but other side effects may get worse, such as RLS. So it depends.
All this is due to the fact that mirtazapine has strong antihistamine properties, but is a weak alpha blocker. So taking less will have an imbalanced effect, with its stronger effects becoming prominent. So antihistamine and 5ht antagonism effects at low dosages, and additional noradrenergic effects at higher ones.
